Golden Vanilla “Eggnog”


  • 1 cup vanilla flavored non-dairy milk of choice, unsweetened
  • 1 teaspoon honey or maple syrup (optional for extra sweetness)
  • ¼ teaspoon ground turmeric
  • ¼ teaspoon ground nutmeg
  • ⅛ teaspoon ground cinnamon
  • 1 scoop vanilla flavored collagen powder
  • 1 pasture-raised egg yolk
  • 1 pinch freshly ground black pepper
  • Cinnamon stick (optional)
  • Dried edible rose petals (optional)

In a high-speed blender, add milk, honey or maple syrup (if using), turmeric, nutmeg, cinnamon, and collagen powder and blend until smooth.

Transfer the liquid to a small saucepan over medium heat and bring to a low simmer.

Place the egg yolk in a small bowl. Once the milk is simmering, slowly pour one quarter of the hot milk over the egg yolk while whisking constantly.

Pour the egg mixture into the pot with the remaining milk and return to a slow simmer while stirring until thickened (it should coat the back of a spoon when dipped).

Once ready, strain the mixture with a fine mesh strainer to remove any lumps and serve with a pinch of ground black pepper and optional cinnamon stick and rose petals.
